Some places you stumble into. Others you’re drawn toward by something in the air — music, laughter, the smell of grilled meat, or in this case, salsa rhythms pouring out onto the cobbled streets of La Candelaria. Babou isn’t just a restaurant. It’s a portal. Step inside and you’re wrapped in warm wood, candlelight flicker, live beats, and a joyous tangle of bodies — lovers dancing with lovers, locals twirling their parents, the occasional pro couple stealing the spotlight and your breath. I came for food. I stayed for life. The Food • Steak pimienta: Decently tender, laced in a creamy pepper sauce that actually had bite. Balanced by a fresh, generous salad — cubes of avocado, cucumber curls, olives, and toasted almonds. Not a lazy plate. • Carbonara: Not Roman, but rich and satisfying. Creamy, with a Colombian flourish — maybe local cheese or butter — and a thick-cut bread slice ready to mop the plate. • Queso estilo parrilla: Grilled cheese — not the sandwich. Think more like halloumi met a smoky asado. Came with caramelized onions and a pile of olives and arugula. Salty, sweet, bitter — nailed it. • Pescado con salsa & tzatziki: Battered fish, solid crust, served with a riot of diced salad and fries. Not greasy. The tzatziki surprised me — creamy, with bits of passionfruit that cut through the fat. Colombian-Greek fusion? Sure. • Merengón El Espíritu del Mundo: A mess of cream, tart passionfruit pulp, strawberries and peaches on crisp meringue. Sweet, sour, crunchy, soft — the chaos worked. A fitting end to a salsa-fueled night. The Vibe The space screams personality. Distressed wooden tables, scribbled lyrics under glass, salsa posters, and waiters who seem to be actors moonlighting as servers. They’ll get to you — eventually. But you’re not here to rush. Service is slow, but never rude. Drinks flow. Conversations stretch. The kind of place you nurse a beer just to stay in the moment. Bottom Line Babou is not cheap by local standards (our meal hit 275,000 COP before tip), but you’re paying for more than calories. You’re paying to see a city’s soul — spun across a dance floor, served with steak and soul, and told in the rhythm of salsa. Would I return? In a heartbeat.
