コンセプトは何ですか？ コロンビアに帰国した後、シェフのハイメ・トレゴサは日本の居酒屋を自分なりにオープンしました。小皿をシェアするために設計された小皿が特徴で、ラテンアメリカ、北欧、日本の味がコロンビア各地からの食材を使用して達成されています。 グランジサウンドトラックの中でくつろげる居心地の良いスポットで、カクテルペアリングにも重点を置いています。

調理担当：数年間世界中を転々とし、スウェーデンのFävikenや日本のCa Sentoなどで料理の腕を磨いたトレゴサは、スペインの世界的に有名なバスククリエイティブセンターでも学んでいます。 首都ボゴタに戻った際、最初の仕事は有名なエル・チャトのヘッドシェフでした。その後、トレゴサは単独で活動を開始しました。


ハイメ・トレゴサ
名前の意味は何ですか？ ヒュモ・ネグロ（黒煙）という名前は、チャピネロ地区にレストランを建設している際に生まれました。 初めてグリルを着火すると、黒煙が濃厚に立ちのぼったため、その名前が付けられました。
