While visiting my mom in Colombia, I stumbled upon a true hidden gem in Manizales: La Beautiful. This is not your typical restaurant. La Beautiful offers a rotating 7-course tasting experience inspired by a beloved book. During my visit, the menu was inspired by The Little Prince (El Principito), and every course felt like a creative interpretation of its themes, emotions, and lessons. What makes the experience special is that you’re not just enjoying food. You’re exploring the mind and imagination of Chef George. By the end of the evening, I felt so connected to his passion and creativity that I found myself calling him “Georgie.” As George describes it: “No somos solo un restaurante: somos una filosofía, un movimiento y una forma de ver la vida desde la sensibilidad, la belleza, la estética y la memoria.” And honestly, that perfectly captures the experience. La Beautiful is one of the best food experiences I ever had. The atmosphere is perfect, the food is amazing full of colors and original flavours. We were transported to the Little Prince adventure through the food. The service was excellent.
