Born in Barranquilla, Colombia, Manuel is a Business Administrator from the Jorge Tadeo Lozano University and a Chef from the Gato Dumas School of Gastronomy.
He is chef and owner of Manuel Cocina in the city of Barranquilla and Cocina 33 in the city of Montería. He was nominated for Best New Chef at Bogotá Madrid Fusión 2021. Winner of 12 La Barra Awards between 2016 and 2020 in different categories.
From an early age, Manuel discovered a love for the kitchen and culinary art, preparing great dishes of traditional cuisine typical of the Caribbean Coast. His cuisine seeks to highlight the ingredients, flavors and techniques of local gastronomy, mixing them with creative and avant-garde cuisine, where authentic flavor predominates.
He is a member of the Academic Committee of Sabor Barranquilla.
