Get to know the coffee culture of Barichara through an authentic, conscious and deeply connected experience with the land. On this tour, you will travel through the soul of a living tradition that is cultivated with respect for nature and peasant knowledge. The adventure begins leaving Barichara towards the village of El Caucho, a quiet corner on the outskirts of town where the landscape changes and nature makes its way through dirt roads and native trees. We will walk along trails through the unique ecosystem of the tropical dry forest, admiring the biodiversity that characterizes this region and understanding how this environment contributes to the special character of the coffee grown here. Upon arrival at the farm, you will be welcomed by local peasants and farmers, guardians of a tradition that has been passed down from generation to generation. With them you will learn about the practices of planting, cultivating and harvesting coffee, from the deep respect for the rhythms of the land to the sustainable techniques they use to preserve the balance of the ecosystem. Here, coffee does not grow in monoculture, but under the generous shade of the caracolí trees, which form a protective forest where the local fauna, the aromas of the countryside and the song of the wind coexist. The tour continues through these shady and cool paths, while you listen to stories about the native customs and traditional ways of working that are still preserved. It is an experience that goes beyond coffee: it is a window into the rural Santander way of life, its identity and cultural resistance. The second part of the tour will take you to another farm specialized in the transformation and tasting of coffee. There you will participate in a guided cupping where you will be able to try different filtering methods: French press, V60, chemex, and more. Each cup reveals unique nuances, from fruity notes to earthy flavors, the result of careful and respectful cultivation. To complement the experience, artisanal jams, fresh goat cheese and other typical products of the region will be offered, creating a harmony of flavors that exalt the local. Finally, we will visit the beneficiadero, the heart of the grain processing. Here you will learn about the stages of pulping, fermentation, drying and selection of the coffee. You will learn to differentiate the different types of beans and to appreciate the meticulous work that goes into each cup. This moment closes the coffee cycle, a journey that began at the seed and ends in the enveloping aroma of a shared infusion.
