Was ist das Konzept? Nach seiner Rückkehr in sein Heimatland Kolumbien eröffnete der Koch Jaime Torregrosa seine eigene Version eines japanischen Izakayas. Das Ergebnis ist ein entspannter Ort, dessen kleine Teller - alle zum Teilen gedacht - lateinamerikanische, nordische und japanische Aromen bieten, die durch kolumbianische Zutaten aus diesem biodiversen Land erreicht werden. Ein gemütlicher Ort mit einem Grunge-Soundtrack, der auch einen starken Fokus auf Cocktail-Paarungen legt.

Am Herd: Nachdem er mehrere Jahre weltweit gearbeitet hatte und seine kulinarischen Fähigkeiten bei Restaurants wie Fäviken in Schweden und Ca Sento in Japan geschärft hatte, studierte Torregrosa auch am weltberühmten Basque Culinary Center in Spanien. Als er in die Hauptstadt Bogotá zurückkehrte, war sein erster Job als Küchenchef im renommierten El Chato; Torregrosa wagte sich dann alleine.

Was steckt hinter dem Namen? Humo Negro, oder schwarzer Rauch, entstand, als Torregrosa das Restaurant im Viertel Chapinero baute. Beim ersten Anzünden des Grills stieg dicker, schwarzer Rauch auf - und der Name blieb haften.
